Today I realized three things. One, I wanted to eat eggs. Two, I wanted to eat vegetables. Three, I wanted this snack to be easy to grab when I was in sudden need of food.
First, I had to get everything I needed – eggs (not shown), cheese, spinach, tomato, bacon, green onion, sweet onion, and sausage.
I used 12 eggs.
Whisk, whisk, whisk.
(You have to read that in a kind of whistly voice.
Then the veggies get chopped and everything gets thrown together!
I like tomato, but I thought it was too much tomato with the possibility of causing the outcome to be too wet. I only used about a third of the tomato. I also ended up using only half the sweet onion showed. I did use the turkey sausage, all the green onion, and all three slices of thick cut bacon. I added a handful of spinach and half a cup of the reduced fat mild cheddar.
This is where I got worried that the muffin tin was too full.
After 27 minutes at 375 degrees, it was time to pull them out with my bear paw oven mitt.

It was super delicious! Each one is about 254.4 calories with 20.3 grams of fat, 1.9 grams of carbs, and 17.6 grams of protein.
