Recent cooking adventures: Mango-jalapeño salsa, Greek potato, fried pork, and biscuit pizza

Mango-jalapeño salsa and tilapia

I haven’t posted much about my recent cooking, so this’ll be as quick look at a few things. First up, mango-jalapeño salsa! This was pretty simple with mango, jalapeño, cilantro, red onion, lime juice, and some seasoning. Here it’s served on tilapia on a bed of mixed greens, but it goes great with chicken too as well as chips!

Greek potato

For lack of a better term, I was just calling this a Greek potato. Not much to this really – just a Hasselback potato with feta and honey, but it’s totally delicious.

Farm Direct had some cheap, delicious marinated pork collar butt, so I bought it a few times because it was easy to use with other things.

Biscuit pizza

I’m probably too old to share something so dumb, but I liked these anyways. These pizzas were made with Pillsbury Grands! biscuits. At first I used a whole biscuit per pizza, but I revised them to use half a biscuit per pizza. Less calories, less carbs, more tastiness.

Wakeboarding and visiting the OC Night Market

WakeboardingI went wakeboarding with my friends gem and Anela this weekend! We went to Silverwood Lake with my parents on their new boat. I’d been wakeboarding once a few weeks ago, but it was gem and Anela’s first time.

OC Night Market

After some delicious shrimp, potato, and corn soup at my parents’ house, we met Anela’s friend Daniel at the OC Night Market.

We ate, as gem would say, all the things!

We saw this super cute sign with a rad dino on it.

Fried macaroni and cheese with garlic aioli and sausage is tasty.

Eggporn?

We also tried what was being marketed as “eggporn.” The egg is cooked inside the jar in boiling water along with cornmeal, bacon, and green onion. I think. Anyways, it was pretty good.

Super delicious cookies

See these cookies? They’re amazing! There’s actually two kinds in that photo – habanero peanut butter and jelly and salted caramel apple oatmeal. They’re from the Velvet Rope Bake Shop. Check them out and get some cookies!

I also had some other things that I didn’t photograph (or the photos came out badly) including a fried squid, ice cream in a plant pot, fresh potato chips with Thai coconut curry toppings, some sort of corn dog, Brussels sprouts, spam musubi, and probably more about which I’m forgetting. Tasty! There was also a lot of cool art to see, a costume contest, some kids dancing, and live music. I heard a girl with a guitar do a great rendition of the Pokemon theme song, and I also some cosplayers throwing a pokeball at each other.

Oh, and then there was this wookie.

Pork chops for dinner

Delicious. Pork chops, potato, and Brussels sprout. The pork chops were super cheap too. I usually stick with beef because I don’t have to worry about undercooking it, but this worked wonderfully.

Baked banana with chocolate peanut butter candies

You can’t forget dessert. I put milk chocolate peanut butter bears (essentially peanut butter cups) in the sliced banana before baking it. I had some Albertsons butter pecan ice cream with it too.
